Using the AD&D DMG, as any good referee should. It may need some interpretation, as a lot of the DMG does. More understanding in how to apply it and such. Regardless, what I'm doing is rolling on the dungeon chamber contents of Appendix A and trying to apply that to the wilderness.

The stuff I've made this past week-and-some-change here is gameable and easy to run (hopefully), not critical. You, dear reader, only need a solid, reliable table that will make interesting encounters, not buying new tables with 400,000,000 possible permutations. We have so many materials available, enough to generate whatever we need, not all that we want. No supplement or adventure is going to "fix" your game; that's up to you.
I'm trying to illustrate how friggin' easy this is. It doesn't matter if it's mundane or uninteresting. That random fort you roll may be a key location if the players are fleeing some force of monsters. If nothing else, it breaks up the map, making for a more interesting milieu.
